I have a huge sweet tooth and my Chocolate Peanut Butter Stuffed Dates fixes it everytime. This snack is great after a workout or as a dessert.
For the longest time I had no idea what dates were or what they were used for. I finally bought them (get them without the pit!) and decided to try them. They do look like giant raisins which slightly grossed me out even though I love raisins. However, after trying them, I fell in love. They are so sweet and chewy. I love adding them to smoothies as a sweetener or eating them on their own. Dates also provide a great source of fiber for you.
INGREDIENTS:
- Dates
- Peanut Butter
- Chocolate Chips
- Syrup
- Cinnamon
This recipe came from my childhood of constantly eating toaster waffles with peanut butter on top. Anyone else obsessed as much as I was? My favorite breakfast was making toaster waffles, preferably the chocolate chip kind, and then I would dowse them in syrup and peanut butter with cinnamon on top. Sometimes I would even add chocolate chips on top. Not sure how I still have all my teeth in place from the countless times I had this growing up. It was a sugary goodness.
After eating dates with peanut butter I thought about those waffles I used to eat and decided to try replicating that taste with dates. It was a success and now I’m obsessed! I love making them ahead and freezing them. If you are a lover of frozen chocolate than you will love these.

Chocolate Peanut Butter Stuffed Dates
Ingredients
- 1/2 cup Peanut Butter
- 10 Medjool Dates
- Chocolate Chips
- 1 tbsp Maple Syrup
- 1/4 tsp Cinnamon
Instructions
- In a small bowl add the peanut butter, syrup, and cinnamon. Cook in microwave for 15 seconds or until mixture is slightly melted then stir to mix everything together
- Cut the dates down the middle without breaking the date apart
- Use a small spoon or butter knife, stuff the dates with the mixture then top with chocolate chips.
- Optional: Melt the chocolate chips down and drizzle over the stuffed dates. Additionally, melt down extra peanut butter and drizzle over the dates to create layered effect.
- Serve immediately or freeze and eat later
