Vegan No Bake Cookies are the absolute best. I always crave them at the most random times but luckily, I always have the ingredients because this recipe is so easy. The best part is that this recipe is small so no more dealing with 35 cookies to give away to coworkers or neighbors. If you’re like me and live alone, this recipe is perfect for you.
INGREDIENTS:
- Vegan Butter
- Sugar
- Almond Milk
- Vegan Chocolate Chips
- Peanut Butter
- Vanilla
- Quick Oats
When I first began making vegan no bake cookies they would never harden and actually become a cookie. The mixture itself would taste great but it was just a big ole’ glob. I learned the BIGGEST LESSON when making no bake cookies is that you want to boil your butter/sugar/milk/chocolate mixture for an entire minute. Nothing less, nothing more.
This changed everything for the cookie once I would actually set a timer and let it boil for a whole minute. Previously, I always would read directions for boiling the mixture but just do it until I thought it looked done. Nope, don’t do it that way. Learn from me.
In this recipe I use chocolate chips but most people use cocoa powder in no bake cookie recipes. In my opinion, chocolate chips just taste better.
Once everything is done boiling take it off the heat and put in the peanut butter. I would recommend having the peanut butter ready to go so that you can add it in when everything is still hot. And don’t forget the vanilla of course.
After adding all the oats into the same pan (why use another bowl and have to wash that too?) mix everything together and begin forming your cookies with a spoon onto a baking sheet. If you have a lot of counter space, lay out a piece of wax paper and place the cookies on that. Let it sit for 20 minutes or more, until they harden.
I purposely made this recipe to make a small batch for my gals who also live alone. It’s fun to make cookies every once and while but when you make a batch of 35 cookies, you either have to try and give them away or end up eating them all in a week and feel like crap. If you do want a larger, average size batch of cookies I would recommend just doubling this recipe.

Vegan No Bake Cookies
Ingredients
- 4 tbsp Vegan Butter
- 1 cup Sugar
- 1/4 cup Almond Milk Any non-dairy milk will work
- 1/4 cup Vegan Chocolate Chips 2 tbsp. of Cocoa Powder works too
- 1/2 cup Peanut butter
- 1 tsp Vanilla
- 1 1/2 cup Quick Oats
Instructions
- In medium pan, mix together butter, sugar, milk, and chocolate on medium to high heat
- Bring the mixture to a boil for an entire minute then remove from heat
- Mix together peanut butter and vanilla until smooth
- Add in oats until fully coated then place mixture on wax paper on pan to form cookies
- Let them cool and harden for 20 minutes on the counter then eventually store in fridge.
