This Vegan Spicy Sun Dried Tomato Pasta is so good and easy to make. It’s a nice change up from typical tomato sauce with your pasta. I like it because it’s spicy and you don’t always see that in pasta dishes. Everything you need is either already in your kitchen or easily accessible at your local grocery store. This pasta is served any time of the year and can be topped with arugala or spinach for some extra greens. I really could eat this every day it’s so addicting.
INGREDIENTS:
- Penne Pasta
- Sun Dried Tomatoes (canned)
- Minced garlic
- Almond milk
- Corn Starch
- Nutritional Yeast
- Chili Flakes
- Oregano
- Olive Oil
- Salt + Pepper
- Water
Make sure you have a blender, food processor, or a hand blender to blend up the tomatoes. This is key to the recipe. If you do you a blender make sure you cool down the mix before putting the lid on. It might splash if you put the lid on instantly and let it heat up in the blender.
If you want to customize this recipe, add roasted tomatoes at the end of this recipe to get extra tomatoes in your pasta. Additionally, making this sauce to use for your next homemade pizza to spice things up and add a creaminess to your pizza. Similar to alfredo pizza, if you know what I mean?
I really like making this pasta in the summertime because tomatoes always make me think of summertime. Growing up we always grew tomatoes and would make so many recipes with them. Of course salsa which got me addicted to spicy things. This pasta is perfect if you’re like me and love tomatoes along with spice then you will love this pasta.

Vegan Spicy Sun Dried Tomato Pasta
Equipment
- Blender
Ingredients
- 3 cups (uncooked) Penne Pasta
- 1/2 cup Sun Dried Tomatos Canned in jar with oil
- 2 tbsp Minced Garlic
- 2 cups Unsweetened Almond Milk
- 2 tbsp Corn Starch
- 1 tbsp Nutritional Yeast
- 1-2 tbsp Chili Flakes
- 1 tsp Dried Oregano
- 1 tbsp Olive Oil
- 1 tsp Salt + Pepper to taste
- 1/3 cup Water
Instructions
- Cook pasta according package. Set aside but make sure to not overcook it.
- In a large frying pan, add the olive oil along with the minced garlic. Cook for 3 minutes until brown. Add corn starch and begin mixing. Add a pinch salt and then slowly pour over the milk until smooth. Allow it to thicken and then add the remainder of the milk.
- In a blender add 1/2 cup sun dried tomatoes, nutritional yeast, and water to the blender. Then pour the pan of sauce into blender and mix together.
- Chop the rest of the sun dried tomatoes finely. Add them to a large frying pan with olive oil. Add chili flakes, oregano and saute for 2 minutes. Stir to make ensure nothing sticks to the pan.
- From the blender, pour the sauce onto the saute sun dried tomatoes and mix well. Add some salt to taste. Add cooked pasta and let cook altogether for 2 minutes. Add more chili flakes as desired.
- (If you feel like it's too thick add a tbsp of water to the mix and stir)
