Calling all my salmon lovers! If you love salmon, you will love this recipe. This combines my favorite things, sandwiches and salmon. I made a super easy salmon patty recipe for 1 to 2 people for girls like me that live alone and don’t need to feed a family of 5.

These salmon patties are perfect in between a bun with avocado, lettuce and tomato like a burger. Or you could do what I love and make an egg sandwich with it. Below I added it to a wannabe eggs benedict and it was delicious. I also like eating these plain with some mayo for a light lunch or snack.

Salmon Patties
Easy salmon patties to have with sandwhices or with your breakfast sandwhich.
Get frozen salmon and cover in 1 tsp of olive oil and 1/2 of salt and pepper then wrap in foil and put in oven 450 degrees for 20 minutes.
Cook peppers and onions on skillet until softened
In a food processor, blend together onions, bell peppers, egg, rest of salt and pepper, cilantro, jalapeno, mayo, soy sauce, and garlic powder then place in large bowl.
When the salmon is done, add to salmon food processor and blend for a couple seconds until chopped but not smooth. Add salmon to large bowl and mix together.
Add in bread crumbs and combine mixture then create small 1 1/2 inch balls.
Place patties on skillet on medium high heat and cook for 2 minutes on each side or until crispy. Enjoy!
