This Cheesy Bean Queso recipe is the best addition to a big party. It makes enough to feed the whole crowd while also being incredibly addicting! Serve it on the stove or in a crock pot to stay warm. I love it with corn chips the most.
We’ve been making it in my family for as long as I can remember. Sometimes someone would add too much jalapeno and it would make it super spicy but we would still eat it because it’s so addicting. I started making it in college and my friends fell in love with it too.
It’s great with just chips but can also be a great side to a dinner. Whether you are making quesadillas or tacos I love pouring this over it all! Make my guacamole for a great addition to the party.
Ingredients:
- Velveeta Cheese
- Refried Beans
- Sliced Tomatoes
- Jalapenos
You will need to double-pan boil the queso. This sounds harder than it seems but it’s very simple. You will need a large skillet and a large deep pan. Pour water into the skillet and bring it to a boil. Add the large pan on top of the water and then add cheese to that. The cheese should slowly melt. Stir as it melts.
Then in a blender or large food processor, mix together the tomatoes, refried beans, and jalapenos. Mix together until smooth. Pour the mixture into the melted cheese.
Let them cook for 5 minutes and then taste with a chip to make sure it’s to the spice level you desire. Add more jalapenos if needed.
The refried beans seem strange at first but they mix nicely into the queso and make the sauce thicker. If you want meat in it, I would cook hamburger separately to your desired liking then add it in the end.
