Getting Started
Everyone has one great meal they keep up their sleeve if they ever need to make something last minute, mine are my Healthy Zucchini Tacos! If you don’t have a go to meal, make it these! They are easy, healthy, and win over even the picky eaters.
The hardest part of this recipe is holding back the tears while you chop the onion. And to be honest, I prefer a red onion anyway.
Chop up all your veggies and put them in a large pan on the stove on high. Add olive oil then add the onions and zucchini first to begin cooking. These will take the longest to cook so throw them in first. Once they begin cooking start to add the rest of the veggies.
Almost Ready!
You’ll know it’s done once the zucchini is softened. I love warming up my tortillas in the oven on low or sauteing them on another pan with a little olive oil and salt. For toppings, too much is never enough. I love chopping up extra tomatoes and cilantro and adding it on top of the tacos. Additionally, I’ll add sour cream. I like using dairy free sour cream and normally get Tofutti Sour Cream.
One thing you can’t go without is guacamole for this recipe. I make a mean guacamole, I’m not going to lie. Get it here!
If you really want to impress your guests, skip the cheap shredded cheese, and make your own queso. Queso on these tacos are amazing and only add more flavor and spice!

Zucchini Tacos
Ingredients
- 2 Medium Sized Zucchini
- 1 can Corn
- 1 can Black Beans
- 1/2 Chopped Red Onion
- 1 cup Chopped grape tomatos
- 1 cup Chopped Cilantro
- 6 Mini Tortillas
- Diced Jalapenos Add as you wish
- 3 Chopped Poblano peppers
- 1 tsp Garlic salt
- 1 tsp Cumin
- 1/2 Lime
- 1 tbsp Olive oil

- Sour cream
Instructions
- Turn the stove to medium heat and coat frying pan with olive oil then add corn, beans, onions, cilantro, zucchini, and poblano peppers and top with lid. Cook until softened. (About 15-20 Minutes)
- Lower heat then add garlic, cumin, jalapenos, and grape tomatoes. (about 5 more minutes)
- Add mixture into tortilla then add desired amount of fresh cilantro, grape tomatoes, guacamole, and sour cream on top.
- Squeeze lime over tacos.
- Serve and eat immediately. Enjoy!
